    Chinese restaurant BAI YU LAN offers genuine Cantonese and Shanghai cuisine. Among others, we would like to recommend two specials, “salty duck with organic vegetables” and “stewed baby cabbage in broth”. Although Chinese cuisine is renowned for its rich choices of ingredients, meat is mostly still the main ingredient. Since people become more and more concerned about their health, the number of guests ordering vegetables is increasing. The two recommended dishes are now included in the set menu. Our Chefs carefully select all ingredients.
    Mixing sliced Shanghai duck, which has been pickled for a whole day, and fresh organic vegetables together, makes “Salty duck with organic vegetables”. Duck is usually thought to be quite greasy, but the salty flavor and vegetables perfectly neutralize the greasiness.

    “Stewed baby cabbage in broth” is one of the most popular Chinese dishes. Baby cabbage is steamed first and then specially made pumpkin broth is added. The flavor is a little salty and very light. All baby cabbages selected are soft small cabbages imported from mountain regions in Taiwan.

「Dalian Black Wagyu beef」directly shipped from Dalian is carefully examined on freshness, quality and defrosting condition by Japanese Chef Kimura. Roasting methods include porcelain pot roasting (cream roasting), Teriyaki roasting, ginger roasting, vegetable miso roasting, salt roasting (splashed with orange juice). In addition to enjoying superior quality of the food, guests can also taste other various dishes prepared by our Restaurant according to their own preference.

「Braised sea bream head」 is a limited quantity dish. One sea bream can only prepare for one serve of braised sea bream head. Sea bream directly shipped from place of origin will be used on the same day of arrival. Seasoned with soy sauce and sweet in taste, the dish preserves strong original flavor while its saltiness is reduced. This is a rare dish owing its reputation to its limited quantity.
「Special spicy sushi」 is a dish developed based on most guests’ requests. Over 15 materials are used, including tuna, sea bream, Kampachi fish, partial mouth fish, scallop, etc. It is a luxury item prepared with equal emphasis on color and taste. Besides, each material being used is prepared within 24 hours of purchase.

    SAZANKA Teppanyaki is a restaurant providing special Teppanyaki dishes, and where a combination of French and Japanese cuisine is available for your enjoyment. As appetizer and soup there are three assorted dishes and the Garden Hotels’ special consommé with hints of French cuisine. As it comes from the Teppanyaki, its flavor is quite unique. There are popular set meals such as the “Japanese Beef Set Meal A” (880Yuan), the “Ginkgo Set Meal” (680Yuan). The meat, fish and vegetables are all selected seasonal ingredients.

    The restaurant purchases freshly caught grouper, perch, snapper, sea bream, rock bass, yellow tail fish, and flounder in the early morning. Many other restaurants use frozen or cultivated fish, but our restaurant only selects the best fish with its own unique characteristics. Because of this freshness, we serve the fish on the day we purchased it.
    Starting from April, beefsteak from Japanese black hair cattle raised in China began to be sold in mass quantities. There is sirloin meat, shoulder meat and tenderloin meat, which can be cooked in the customers’ preferred way. The high quality beef, which tastes as good as native Japanese cattle, is produced in Dalian.
    The vegetables used here also include all fresh seasonal organic vegetables; and high-iodine egg is used in the scrambled rice dish. Guests will have the chance to personally witness the scene of our chef preparing the dishes, after which they will enjoy a hearty meal and taste the finely selected delicacies.     “Sauce marinated Botan Shrimp, with lemon flavored Baikal caviar”. This marinated dish highlights the delicacy of fresh Botan Shrimp, topped with citrus and Baikal caviar. The marinated Botan Shrimp from Australia and premium Baikal caviar together form a unique combination that features distinct flavors when compared to similar uncooked fish, such as sushi or sashimi.

    “Lobster with small reed flavored consommé” The lobster is complimented by a specially prepared vegetable seasoning sauce, slightly boiled to preserve its original flavor, and then crushed unshelled to extract its juicy essence, so as to create royal lobster. The lobster juice is also added to the small reed flavored sauce, and then incorporated into a consommé. The final result will bring you complete enjoyment.
     “Mesh roasted select veal, with mixed stew flavored vegetable”, presents incredible softness, fine texture, and smooth taste, which can only be found in milk-fed calf. Because it is free from bacteria, it can be served safely even when half roasted. In addition, the sauce served is not a common sauce. Instead, it is a concentrated sauce slowly stewed for full flavor; you only need to apply a small amount on the veal before savoring its distinct taste. This unique delicacy is only served in French Restaurant CONTINENTAL ROOM.

    Starting from the middle of April, French Restaurant CONTINENTAL ROOM, which focuses on French cuisine, will update its main menu. At each turn of the season, we will change seasonal dishes accordingly. All the dishes added this time incorporate a number of popular and fashionable trends, for which we make sincere recommendations. “Organic Salad Bar”
Unique flavor and aroma of organic vegetable leaves

    “Each vegetable has its unique flavor and aroma. You are invited to have a taste of our safe organic vegetables which are rare in Shanghai.” We have set up “organic salad bar” in Rose Café, where there are organic lettuces available. These tender leaves are fresh with high nutritional values typical for organic vegetables cultivated in pesticide free green houses. Also there are several dressings, onions, and other ingredients available to complement your selection.
    The vegetables are purchased from a pesticide free organic farm in suburban Shanghai run by native Japanese; the organic vegetables provided in Rose Café are cultivated with potable purified water, even the freshly picked vegetables can be eaten right away. The Okura Garden Hotel Shanghai has also installed independent water purifying facilities; which makes the running water inside the hotel suitable as drinking water.

    TIP: The organic salad bar offers tender leaves of arugula, green and red mustard leaves, lettuce, water cress, and cabbage. These leaves are picked when they grow to 10-15cm high two weeks after sprouting into seedling, therefore their nutritional values are 100 times that of common vegetables. Furthermore, their flavors differ somewhat from common vegetables.
